Banoffee Pie - mini ones

We had leftover toffee in a jar in the fridge. My darling mother decided it best not go to waste, so bought a packet of 8 mini biscuit bases or tartlets, oh and bananas. As you can see from the picture, we almost run out of cream, but still took long enough to whisk by hand!

Now we got excess biscuit bases and bananas, lets by toffee and cream and make some banoffee pies, would be nice if this cycle kept up!

Banoffee Pie

I made a banoffee pie today.

My mum insisted we use her 11 inch cake tin thingy rather than a normal 7 inch one, and double the quantities.
She had also purchased ready made toffee rather than making our own, saved a bit of work I suppose.
